Notre cuvée N°6 “Fossiles” est la signature emblématique du Domaine Haut-Marin, un assemblage méticuleusement élaboré à partir de Colombard, Sauvignon et Gros Manseng. Cette cuvée est célèbre pour avoir positionné le domaine sur la carte viticole grâce à son caractère unique et son équilibre inégalé. Elle incarne l’essence même de notre terroir et l’excellence de notre savoir-faire.

Le Gros Manseng joue un rôle crucial dans cet assemblage, apportant du volume au vin tout en préservant une fraîcheur exceptionnelle, qui défie les attentes typiques d’un vin de cette richesse. Le Colombard et le Sauvignon injectent une vitalité et une vivacité, accentuant le profil aromatique complexe et vibrant de la cuvée.

N°8 Le Grand Pavois

Rich and refined

Our cuvée No. 8, “Le Grand Pavois”, is a refined blend of Gros Manseng and Petit Manseng, two grape varieties that complement each other perfectly to create our signature sweet wine. This cuvée is aged for one year in stainless steel vats, a method that increases the wine’s complexity while preserving its delicate aromatic nuances and original freshness. Gros Manseng brings solid structure and lovely freshness, while Petit Manseng, known for its ability to concentrate sugars and aromas, enriches the wine with intense, deep notes. The result is a sweet wine of astonishing complexity, offering layers of aromas ranging from ripe tropical fruits to hints of honey and citrus, complemented by a subtly sweet and lingering finish.

Our “Philippe” cuvée is a tribute to Philippe, Elisabeth’s brother, whose hard work and devotion to our estate’s vines have been essential to our success. This cuvée is a meticulously selected blend of Cabernet Sauvignon and Merlot, sourced exclusively from the estate’s finest plots, highlighting Philippe’s commitment to cultivating each vine to perfection. This red wine combines the robustness and structure of Cabernet Sauvignon with the roundness and suppleness of Merlot, resulting in a harmonious and powerful blend. On the palate, it reveals complex aromas of ripe black fruits, blackcurrants and plums, complemented by leather and spices.
